Avocados are aplenty and it’s too hot to cook. Time to bring out my favorite salsa! I look forward to it each year. It’s fast, easy and full of flavor.
Beans & Yoga’s Salsa Cruda
1/4 – 1/2 cup chopped onion (about 1/4 onion)
3/4 – 1 cup chopped tomato (1 hothouse tomato or 1/2 beefsteak tomato)
1/4 – 1/2 cup chopped cilantro
Juice of one large lime or 2 small limes
Salt to taste
Mix all ingredients, tossing well. Start with a little salt and keep adding until you get the flavor you like. It might seem as if you’re adding a lot of salt, but remember, it’s not like you’re adding salt to alread salty processed food. You might need up to a 1/4 teaspoon.
Serve with corn chips, re-fried beans, scrambled eggs, or with tortillas and melted cheese. Keep refrigerated.
